Ninja Creami Lemon Ice Cream

It’s easy to make lemon ice cream in the Ninja Creami with just a few simple ingredients!

This delicious Ninja Creami lemon ice cream is a cinch to whip up, so you can enjoy a cool and creamy treat with minimal effort.

When spring and summer roll around, I love ALL the lemon desserts.

There’s just something really refreshing about the zippy flavor of lemon, and when you pair it with a cool and creamy treat, it’s the perfect way to cool down on a hot summer day.

The Ninja Creami machine makes it easy to create a variety of different flavors of ice cream and sorbet, and this Ninja Creami lemon ice cream just might become one of your new favorites!

I opted to use lemon instant pudding mix in this recipe, which provides flavor, sweetness, and helps to stabilize the mixture (instead of the commonly-used cream cheese).

Then I added chopped lemon Oreo cookies to finish it off! The result was a sweet treat that had just the right amount of lemon.

It’s one of our favorite lemon recipes for the Ninja Creami, and once you try it, you’ll see why!

Ninja Creami Lemon Ice Cream with Pudding Mix

Using pudding to make ice cream in the Ninja Creami is super easy.

I do it with my Ninja Creami vanilla pudding ice cream, Ninja Creami chocolate pudding ice cream, Ninja Creami cherry cheesecake ice cream, Ninja Creami butterscotch ice cream, and I also use it in this dairy free Ninja Creami chocolate ice cream.

You simply combine the pudding mix with milk to dissolve, then add the rest of the ingredients. You don’t have to wait for it to thicken into pudding or anything like that.

It’s the perfect treat if you want something that has distinct lemon flavor, but isn’t overwhelming.

How to Make Lemon Cookie Ice Cream in the Ninja Creami

It’s easier than you think to whip up this simple ice cream recipe!

Ingredients You’ll Need:

  • Whole milk
  • Instant lemon pudding mix
  • Heavy cream
  • Optional: Lemon cookies for mix-in

How to Make it:

Dissolve pudding mix. In a small bowl or large liquid measuring cup, whisk together whole milk and dry instant pudding mix until dissolved.

Finish ice cream base. Add the heavy cream to the pudding mixture and whisk to combine. Pour mixture into a Ninja Creami pint container, being careful not to exceed the max fill line, and close the lid.

Freeze. Transfer the pint to a level surface in your freezer and freeze for at least 24 hours.

Spin. Remove pint from freezer and take off the lid. Place the pint into the outer bowl apparatus and close the outer bowl lid.

Place bowl assembly into the Ninja Creami machine and press the Ice Cream button. The motor base will start running and it will process the ice cream.

Check consistency. Remove the pint from the machine and check the texture of the ice cream.

If it appears crumbly after the first spin, insert it back into the machine and use the Re-spin button to process it again.

If it’s still crumbly after that, add a tablespoon of milk and Re-spin again.

Optional: Add mix-in. Create a well in the ice cream that’s about 1/2-inch wide and extends to the bottom of the pint. Add chopped cookies to the well.

Insert the pint back into the machine and use the Mix-in function to incorporate.

Then you’ll be ready to scoop and serve!

Notes and Adaptations:

  • This has what I would describe as a light but distinct lemon flavor. If you’d like a stronger flavor, feel free to add some lemon zest (1 to 2 teaspoons) or a bit of lemon extract (I’d start with 1/4 teaspoon, as it can be quite strong) to the base before freezing.
  • You can omit the cookies if you’d like. I used lemon Oreos, but you could use a different lemon cookie if you’d like (Girl Scouts Lemonades or Lemon-Ups cookies would be good, too!).
  • If you’re enjoying leftovers of this ice cream, I recommend letting the pint sit out at room temperature for about 10 minutes to soften slightly before scooping.

Ninja Creami Lemon Ice Cream

This lemon ice cream is made with pudding mix for an easy treat, then lemon cookies are added for a delicious mix-in!

Ingredients

  • 1 1/2 cups whole milk
  • 4 TBSP instant lemon pudding mix
  • 1/2 cup heavy cream
  • Optional: 1/4 cup chopped lemon Oreo cookies

Instructions

  1. In a small bowl or large liquid measuring cup, whisk together milk and instant pudding mix until dissolved.
  2. Add heavy cream and whisk to combine.
  3. Transfer mixture to a Ninja Creami pint container, being careful not to exceed the max fill line. Close the lid.
  4. Place pint on a level surface in your freezer and freeze for at least 24 hours.
  5. Remove pint from freezer and take off lid. Place pint into the outer bowl apparatus and secure the outer bowl lid.
  6. Place outer bowl into the Ninja Creami machine and use the Ice Cream function to process the ice cream.
  7. Remove pint from freezer and check the consistency of the ice cream. If it appears crumbly, place the pint back into the machine and use the Re-spin function. If it's still crumbly after that, add a tablespoon of milk and Re-spin again.
  8. Create a well in the ice cream that's about 1/2-inch wide and extends to the bottom of the pint. Add chopped lemon cookies to the well. Insert the pint back into the machine and use the Mix-in function to incorporate.

Notes

  • This has what I would describe as a light but distinct lemon flavor. If you'd like a stronger flavor, feel free to add some lemon zest (1 to 2 teaspoons) or a bit of lemon extract (I'd start with 1/4 teaspoon, as it can be quite strong) to the base before freezing.
  • You'll only need about half of a small box of instant lemon pudding mix. You can either double the recipe to make two pints, or save the remaining pudding mix for another time!
