Ninja Creami Cookie Butter Ice Cream

Making Biscoff cookie butter ice cream in the Ninja Creami is super easy, and the result is a silky smooth and decadent treat!

If you love Biscoff cookies and cookie butter, you’re going to fall head over heels for this Ninja Creami cookie butter ice cream!

Oh, how I love all things Biscoff.

Whether it’s a pack of the Lotus cookies on an airplane, a spoonful of cookie butter spread on graham crackers, or a delicious dessert made with Biscoff, there’s so much to love!

Lotus Biscoff cookies are a type of speculoos cookies, known for their sweetness and hint of warm spices. The cookie butter has the same flavor profile, but in a spread form.

You can sometimes find other brands of cookie butter as well, such as Trader Joes.

So as I’ve been experimenting with so many fun flavors in my Ninja Creami machine, I decided to whip up a batch of Ninja Creami cookie butter ice cream.

I have to be honest–this might just be my favorite flavor so far!

It has the most perfect creamy texture, the most delightful flavor of Biscoff cookies, and it’s a great way to satisfy your sweet tooth.

Biscoff Ice Cream in the Ninja Creami

The great thing about the Ninja Creami ice cream machine is that it makes it super simple to enjoy homemade ice cream with very minimal effort.

You simply mix up an ice cream base, freeze for 24 hours, then spin it in the machine to enjoy rich and creamy treat.

It’s easy to customize different ingredients and flavors, which is all part of the fun! I always have a few pints in my freezer, ready to be enjoyed at any time.

For this recipe, I used just a few ingredients, including Biscoff cookie butter in the ice cream mixture, to create a flavorful base that can be enjoyed alone, or with some Biscoff cookie pieces mixed in!

How to Make Cookie Butter Ice Cream in the Ninja Creami

It’s easier than you think to make this delicious Biscoff treat!

Ingredients You’ll Need:

  • Whole milk
  • Vanilla instant pudding mix
  • Cookie butter (Biscoff, Trader Joe, or other brand)
  • Heavy cream

How to Make it:

Dissolve the pudding mix. In a small bowl or large liquid measuring cup, whisk together whole milk and instant vanilla pudding mix until the powder is dissolved.

Add the cookie butter. Melt the cookie butter in a microwave-safe bowl for about 15-20 seconds, or until nice and smooth. Whisk the cookie butter into the milk mixture until combined.

Add cream and freeze. Add the heavy whipping cream, whisking to combine.

Pour the mixture into a Ninja Creami pint and close the lid. Transfer to your freezer and freeze for at least 24 hours.

Spin. Remove the pint from the freezer and take off the lid. Place the pint container into the outer bowl apparatus and secure the outer bowl lid.

Place the outer bowl into the Ninja Creami machine and use the Ice Cream function to process the ice cream base. The cycle will take about 2 minutes.

Re-spin if needed. Remove the pint from the machine and check the texture. If the mixture appears crumbly after the first spin, you can use the re-spin function to process it again.

If it’s still crumbly, you can add a tablespoon of milk and re-spin again, which should do the trick!

Optional: If you’d like to add a mix-in, create a well in the center of the ice cream that’s about 1/2-inch wide, and that extends to the bottom of the pint.

Place your mix-in in this well and insert the bowl back into the machine. Use the Mix-In function to spin it.

Notes and Adaptations:

  • You can enjoy this plain, or add 1/4 cup of chopped Biscoff cookies using the Mix-in function.
  • It would also be delicious with chocolate chips mixed in, then top with some mini marshmallows for a s’mores inspired treat!
  • You can generally find cookie butter at your local grocery store–my store keeps it in the bakery section, but some stores may have it in the peanut butter aisle.
  • You don’t need the whole package of vanilla pudding mix for this recipe. Use some of the extra for a batch of Ninja Creami vanilla pudding ice cream if you’d like!
  • If you need to make this dessert without dairy, you can try using coconut cream instead of heavy cream, and unsweetened coconut milk, almond milk, or oat milk instead of whole milk.
  • If you’re enjoying leftovers of this ice cream, I recommend letting the pint sit out at room temperature for 5-10 minutes to soften slightly before serving.

Ninja Creami Cookie Butter Ice Cream

Rich and creamy, this Ninja Creami cookie butter ice cream is a silky smooth and lightly spiced treat!

Ingredients

  • 1 cup whole milk
  • 2 TBSP instant vanilla pudding mix
  • 1/2 cup cookie butter
  • 1/2 cup heavy whipping cream

Instructions

  1. Combine milk and instant vanilla pudding mix in a small bowl or large liquid measuring cup. Whisk together to dissolve the pudding mix.
  2. Place cookie butter in a microwave-safe bowl and microwave for about 15-20 seconds until smooth. Stir well.
  3. Add the melted cookie butter to the milk and pudding mixture, whisking well to incorporate.
  4. Whisk the heavy cream into the milk mixture until combined.
  5. Transfer mixture to a Ninja creami pint container and close the lid. Place on a level surface in your freezer and freeze for at least 24 hours.
  6. Remove pint from freezer and take off lid. Place pint container into the outer bowl apparatus and secure the outer bowl lid.
  7. Place outer bowl into the Ninja Creami machine. Select the Ice Cream function and allow the cycle to complete.
  8. Remove pint and check the consistency of the ice cream. If it appears crumbly, insert it back into the machine and use the Re-spin function. If it's still crumbly after that, add a tablespoon of milk and use the Re-spin function once more.
  9. If you're adding a mix-in, create a well in the middle of the ice cream that is about 1/2-inch wide and extends to the bottom of the pint container. Add your mix-in to the well, then place the pint back into the machine and use the Mix-in function to spin it.

Notes
