I’ve been a fan of apricots ever since I was a kid. Whether enjoying fresh apricots, canned apricots, or dried apricots, it’s one of my favorite snacks.

And since it’s so easy to make a wide variety Ninja Creami sorbet recipes, it was only a matter of time before I made apricot sorbet.

It’s a refreshing, sweet, lighter treat–perfect for those hot days when you need a little pick-me-up.

Similar to my Ninja Creami peach sorbet, this recipe makes use of canned apricot halves, because I want to be able to enjoy it any time of year, not just when fresh apricots are in season.

It’s a delicious fat free Ninja Creami recipe, so you can enjoy it without the guilt!

Making Homemade Apricot Sorbet

For this apricot sorbet, I used canned apricot halves in syrup, because that’s what my local store sells.

If you can find a variety that uses light syrup or juice, feel free to choose that instead, if preferred.

I also add a little extra sugar to the base, since sorbet tends to be less sweet once it’s frozen. If you’re using canned apricots in light syrup or juice, you may need even more sugar. Just taste and adjust according to your taste!

If you have fresh apricots on hand and want to make a sorbet with them, I’d recommend following this fresh peach sorbet recipe, just using apricots instead.

(Full printable recipe card is available below)

Puree and mix. First, you’ll add the canned apricots along with their syrup to a Ninja Creami pint container.

Use an immersion blender to puree the mixture, then give it a taste for sweetness. If necessary, add 1-2 tablespoons of sugar and stir it into the mixture.

Then, place the lid on the pint container and transfer it to a level surface in your freezer for at least 24 hours.

Spin. Last, you’ll remove the container from the freezer, take off the lid, and place it in the outer bowl of the Ninja Creami.

Secure the outer bowl lid, lock the bowl into place in the machine, and use the Sorbet function to process the pint.

If the mixture is crumbly or powdery after spinning, you can place it back into the machine and use the Re-spin button to process it again.

If it’s still crumbly after that, add a tablespoon of water and Re-spin once more.

Notes and Adaptations:

  • I use canned apricots in heavy syrup, but you can use apricots packed in light syrup or juice, if preferred.
  • If enjoying leftovers of this sorbet, I recommend letting it sit out at room temperature for about 10-15 minutes so it can soften a bit for easier scooping.

Notes

In that case, you may need to add extra sugar to achieve the same sweetness, but that will just depend on your personal taste preference. Keep in mind that the mixture will tend to taste less sweet once it's frozen.
  • If enjoying leftovers of this sorbet, I recommend letting the pint sit out at room temperature for 10-15 minutes, to allow it to soften a bit for easier scooping.
