If you’ve ever been to a Disney theme park, you may have discovered the iconic Dole Whip dessert.

It’s a soft-serve creamy pineapple sorbet that tastes amazing on a hot summer day while you’re wandering the park.

Years ago, I started making fresh pineapple sorbet at home, and it’s one of those treats that always reminds me of a Dole Whip!

I use an ice cream maker to churn the ingredients, so the mixture ends up fluffy and light and perfectly sweet. Just right for enjoying at home during a hot summer day!

Making Sorbet with Fresh Pineapple

The trick to making the best pineapple sorbet is to use a ripe pineapple. Otherwise, it will be lacking in flavor.

I like to wait until the outside of the pineapple is starting to turn golden, and the leaves on the pineapple crown are turning brown. If you pull at one of the center leaves, it should pluck right out with minimal effort.

The pineapple gets blended up with some sugar and lemon juice until it’s nice and smooth, then churned to perfection.

It’s a light and refreshing dessert that feels indulgent without being heavy.

Process or blend until the mixture is completely smooth.

Churn the sorbet. Next, with your ice cream machine’s dasher paddle spinning in a frozen bowl, you’ll pour the pineapple mixture into the machine.

Allow the machine to churn and spin the sorbet, which usually takes about 20-30 minutes to reach optimum soft-serve consistency.

Serve and enjoy. At this point, the sorbet can be enjoyed as a soft-serve, or you can transfer the mixture to a freezer-safe container and pop it into the freezer.

Let it freeze for at least 2-4 hours to firm up a bit more to a scoopable texture, if desired.

Notes and Adaptations:

  • Make sure to use a ripe fresh pineapple, if possible!
