But sometimes I forget just how easy it is to make homemade popsicles!
Now that the weather is warming up here in Nashville, I’ve started making popsicles again, and they never last long.

Making Homemade Popsicles with Fresh Pineapple
I prefer using fresh pineapple to make these popsicles, because it gives a fuller flavor than canned pineapple.
But you’ll want to make sure your pineapple is ripe!
I like to wait until the bottom of the outside of the pineapple is starting to turn golden, and the leaves at the top are starting to look pretty sad. If you pull at one of the leaves in the center of the crown, it should pluck out really easily.
The amount of honey or sugar you use in these popsicles can be tweaked according to the sweetness of your pineapple, as well as your personal preference.
Canned coconut milk helps give these popsicles a hint of creaminess, but you can use coconut yogurt (or vanilla yogurt) instead, if you’d like. If you’re using sweetened yogurt, you might find you need less honey/sugar.

How to Make Pineapple Popsicles
It’s really easy to make this spring and summer staple!
Ingredients You’ll Need:
- Fresh Pineapple
- Coconut Milk or Yogurt
- Lime Juice
- Honey or Sugar

How to Make It:

Blend ingredients. First, you’ll combine the ingredients in the jar of a blender. Blend everything together until the mixture is nice and smooth.
Give it a taste and adjust sweetness, if needed.

Freeze. Next, you’ll divide the mixture among the wells in your popsicle mold.
Insert the popsicle sticks and set the lid in place, then freeze for at least 6-8 hours. I typically just let mine freeze overnight.

Serve. If you aren’t using a silicone mold, you may need to run the outside of the popsicle mold under some warm water to help loosen them up enough to be released from the mold.
Then serve and enjoy!

Notes and Adaptations:
- Ripe pineapple is best for this recipe. If your pineapple isn’t very sweet, you might want to increase the honey/sugar just a bit. Just give the mixture a taste before pouring it into the popsicle mold.
- For a stronger coconut flavor, you can add 1/2-1 teaspoon of coconut extract to the mixture if you’d like.

Easy Pineapple Popsicles
