Easy Strawberry Lemon Popsicles

When spring and summer roll around, I find myself craving two fruity flavors the most: strawberry and lemon.

There’s just something about the bright, cheery flavor of citrus and the sweet, refreshing flavor of strawberries that makes me happy!

My kids have been a fan of simple strawberry popsicles for years, so I decided to branch out with some other varieties this year, such as strawberry Greek yogurt popsicles and these strawberry lemon popsicles.

If you’re looking for a zippy, healthy, sweet frozen dessert that kids and adults alike will enjoy, give these a try! They’re perfect for this time of year.

Strawberry Lemonade Popsicles

These popsicles (AKA paletas) are sort of like enjoying strawberry lemonade, but in frozen dessert form! Best of all, you only need a few ingredients.

I recommend using ripe fresh strawberries, if you have them. They bring so much great flavor and sweetness!

If you don’t have any, or if it’s not strawberry season, swap in frozen sliced strawberries instead.

Fresh lemon juice gives that bright citrus flavor that pairs so well with strawberries, and sugar brings the sweetness we want. Don’t have lemons? Use lime juice instead!

Feel free to play around with the amount of sugar you use, as it could vary depending on the sweetness of the strawberries or your personal preference.

You could even add in some fresh basil when you’re blending everything up if you want a summery herbal flair to your popsicles!

How to Make Strawberry Lemon Popsicles

It’s really easy to make this summery treat.

Ingredients You’ll Need:

  • Fresh strawberries
  • Fresh lemon juice
  • Water
  • Sugar

How to Make It:

Blend all ingredients. First, you’ll add all the ingredients to the jar of a blender. Then you’ll blend everything together until it’s nice and smooth.

Pour this mixture into the wells of your popsicle mold.

Freeze. Next, insert popsicle sticks into the mold and set the lid in place (if using). Freeze the popsicles for at least 6-8 hours, or until they’re firmed up. I usually freeze mine overnight.

Then they’re ready to be served! If you’re using a silicone mold, they should pop right out.

If you’re using a different kind of mold, or if your popsicles aren’t releasing easily, simply run some warm water over the outside of the mold to loosen the pops.

Notes and Adaptations:

  • Feel free to adjust the sugar content based on your personal preference.
  • Although I recommend using fresh ripe strawberries when possible, you can substitute frozen strawberries if needed.

Ingredients

  • 1 pound of fresh strawberries, stems removed and sliced
  • Juice of two lemons
  • 3/4 cup water
  • 1/4 cup sugar

Instructions

  1. Combine all ingredients in the jar of a blender. Blend until completely smooth.
  2. Pour the mixture into the wells of a popsicle mold. Insert popsicle sticks and set the lid in place (if your mold has a lid).
  3. Freeze for at least 6-8 hours, or overnight, until popsicles are frozen through.

Notes

  • If you don't have fresh strawberries on hand, you can substitute frozen strawberries.
  • Feel free to adjust sugar to your taste (and depending on the sweetness of your strawberries).
  • Don't have lemons? Try lime juice instead!
  • If you aren't using a silicone popsicle mold, you may need to run the outside of the mold under warm water to help loosen the popsicles from the mold for easy release.
