How am I to resist the opportunity to support these girls when they’re peddling such delicious treats?
One way I’ve learned to throttle my cookie intake is to incorporate the sweets as an ice cream mix-in!
That way, I can enjoy the decadent flavor of the cookies without eating my weight in them. 🙂
Making Ninja Creami Thin Mint ice cream is one of my favorite options, because the mint flavored ice cream is the perfect base for crumbled Thin Mint cookies.
It satisfies my sweet tooth without me eating the whole package in one sitting!
Ninja Creami Ice Cream with Thin Mint Cookies
Now, if you’re coming across this recipe when Girl Scout cookie season is over, never fear.
You can buy chocolate mint cookies at your local grocery store, and they’re actually a pretty good stand-in for the real deal.
Keebler Grasshopper cookies are a readily available option that would work great!
My favorite knock-offs are the Great Value Fudge Mint Cookies from Walmart, if you need a substitute.
I love making Ninja Creami recipes with pudding mix, so I’ve used some vanilla pudding mix to help create a creamy, sweet base.
Peppermint extract provides the minty flavor, and a few drops of green food coloring provide the pale green hue.
The result is a refreshing and decadent sweet treat. It’s like Ninja Creami cookies and cream ice cream, but with a twist!
How to Make Ninja Creami Mint Chocolate Cookie Ice Cream
It’s really simple to create this delicious ice cream.
Ingredients You’ll Need:
- Milk
- Instant Vanilla Pudding Mix
- Peppermint Extract
- Heavy Cream
- Green Food Coloring
- Thin Mint Cookies
How to Make It:

Dissolve the pudding mix. In a small mixing bowl or large liquid measuring cup, combine milk and vanilla pudding mix.
Whisk until the pudding mix is completely dissolved.
Add in the peppermint oil, heavy cream, and a few drops of green food coloring, whisking to incorporate.
Pour the mixture into a Ninja Creami pint container.
Freeze. Close the lid on the pint contianer.
Transfer to a level surface in the freezer for at least 24 hours.
Spin. Remove the pint from the freezer and take off the lid.
Place the pint into the outer bowl of the Ninja Creami machine, then lock the lid into place.
Secure the outer bowl into the machine. Press the Ice Cream button and allow the cycle to complete.
Re-Spin if needed. Check the ice cream’s consistency. If it looks a little crumbly, insert it back into the machine and press the Re-spin button.
If it’s still crumbly after that, add a tablespoon of milk and Re-spin once more.
Add cookies. Create a well in the middle of the ice cream that’s about an inch wide and extends all the way down to the bottom of the pint (I use a butter knife for this).
Add the chopped cookie pieces to the well, pressing them down if needed.
Insert the pint back into the machine and use the Mix-in button to incorporate the cookies into the ice cream.
Notes and Adaptations:
- If you can’t find Girl Scouts Thin Mint cookies, try a fudge mint cookie variety from your local grocery store instead. You could even use mint Oreos.
- Feel free to serve with additional cookie bits or a whole cookie, or drizzle with Magic Shell for even more chocolatey goodness.

Making Thin Mint ice cream in the Ninja Creami is a fantastic way to enjoy the iconic Girl Scouts cookies!
Ingredients
- 1 1/2 cups milk
- 4 Tablespoons instant vanilla pudding mix
- 1 teaspoon peppermint extract
- 1/2 cup heavy cream
- 4-6 drops green food coloring
- 1/4 cup chopped Thin Mint cookies (approx. 4-6 cookies), plus more for garnish, if desired
Instructions
- In a small mixing bowl or large liquid measuring cup, combine milk and dry pudding mix. Whisk together until pudding mix has dissolved completely.
- Add peppermint extract, heavy cream, and food coloring. Whisk together until incorporated.
- Transfer mixture to a Ninja Creami pint container, being careful not to exceed the max fill line, and close the lid. Place pint on a level surface in the freezer for at least 24 hours.
- Remove pint from freezer and take off lid. Place pint container into the Ninja Creami's outer bowl, securing the outer bowl lid. Place outer bowl into the Ninja Creami machine, locking it into place.
- Press the Ice Cream button and allow the cycle to complete.
- Remove pint and check ice cream's consistency. If it appears crumbly, insert it back into the machine and use the Re-spin button to cycle it again. If it's still crumbly after that, add a tablespoon of milk and Re-spin once more.
- Create a well in the center of the ice cream that's about an inch wide and extends to the bottom of the container (I use a butter knife for this). Add chopped cookie pieces to the well, pressing down as needed.
- Place pint back into the Ninja Creami machine, locking it into place. Press the Mix-In button and allow the cycle to complete.
- Remove pint from machine, scoop, and serve! Garnish with additional cookie pieces if desired.
