Low Carb Chocolate Ice Cream in the Ninja Creami

I’ve made countless varieties of Ninja Creami ice cream using pudding mix, and it’s one of my favorite ways to make rich and creamy treats.

So for this recipe, I knew I wanted to use sugar free chocolate pudding mix.

Not only does it provide flavor and sweetness, but it also enhances the texture of the ice cream.

I use sugar free pudding mix in my Ninja Creami sugar free pistachio ice cream and Ninja Creami sugar free vanilla ice cream, too!

Now, if you need to keep this recipe sugar free, you’ll need to use dairy-free ingredients, such as almond milk or oat milk, and canned coconut cream.

However, if you’re just cutting back on added sugars and don’t mind the natural sugars in dairy, you can use dairy milk and heavy cream.

How to Make Sugar Free Ninja Creami Chocolate Ice Cream

It’s easier than you think to make this delicious ice cream.

Ingredients You’ll Need:

  • Milk (dairy or nondairy, depending on your needs)
  • Sugar free instant chocolate pudding mix
  • Coconut cream or heavy cream (depending on your needs)
  • Vanilla extract

How to Make it:

Dissolve the pudding mix. In a small mixing bowl or large liquid measuring cup, combine the milk and the pudding mix.

Use an immersion blender to mix until the pudding mix has dissolved.

Add remaining ingredients. Stir in the heavy cream and vanilla extract until incorporated.

Pour the mixture into a Ninja Creami pint container and close the lid.

Freeze. Place the container on a level surface of your freezer. Freeze for at least 24 hours.

Spin. Remove the container from the freezer and take off the lid.

Place the container into the outer bowl of the Ninja Creami, securing the outer bowl lid.

Transfer the outer bowl to the Ninja Creami machine, twisting it into place. Press the Lite Ice Cream button.

Check texture. When the cycle completes, remove the ice cream and check its consistency.

If it looks a bit crumbly or powdery, insert it back into the machine and press the Re-spin button.

If it’s still crumbly after that, add a tablespoon of milk and Re-spin once more.

Now it’s ready to serve!

Of course, you can always add a mix-in if you’d like, such as nuts, chopped cookie pieces, etc.

Or just enjoy it on its own–it’s so good!

Notes and Adaptations:

  • To make this recipe sugar-free, choose an unsweetened non-dairy milk (such as almond milk, oat milk, etc.) and canned coconut cream. If you don’t need it completely sugar free, you can use dairy products, such as dairy milk and heavy cream, which contain some natural sugars.
  • If you’re using dairy-free ingredients, an immersion blender makes it easier to mix everything together.
  • I used Jell-O brand sugar-free instant chocolate pudding mix.
  • Feel free to add a mix-in of choice, if you’d like!
  • If you’re serving leftover ice cream, I recommend letting the pint sit out at room temperature for about 10 minutes to soften before scooping.

Ingredients

  • 1 1/2 cups milk of choice (see note below)
  • 3 Tablespoons sugar-free instant chocolate pudding mix
  • 1/2 cup of canned coconut cream or heavy cream (see note below)
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a small bowl or large liquid measuring cup, combine milk and chocolate pudding mix. Mix with an immersion blender to dissolve pudding mix.
  2. Add in coconut cream or heavy cream and vanilla extract, blending to incorporate.
  3. Transfer mixture to a Ninja Creami pint container and close the lid. Place pint on a level surface in the freezer. Freeze for at least 24 hours.
  4. Remove the pint from the freezer and take off lid. Place pint container into the outer bowl and secure the outer bowl lid.
  5. Place bowl apparatus into the Ninja Creami machine and select the Lite Ice Cream function. Allow the cycle to complete.
  6. Remove pint from machine and check consistency of the ice cream. If it appears crumbly, insert it back into the machine and use the Re-spin button. If it's still crumbly after that, add a tablespoon of milk and Re-spin once more.
